This is my go to recipe over the holidays everyone loves it. No processed sugar and a sweet treat!
Blueberry Banana Bread with Honey Ingredients:
- Butter for greasing the loaf pan
- 1 3/4 cups all-purpose flour, plus extra for dusting the loaf pan
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1 teaspoon fine salt
- 1/2 cup vegetable oil
- 1 cup Meadowlily Farm Honey (use the measuring cup you used for the oil for the honey, it will not stick nearly as much to the measuring cup)
- 2 teaspoons vanilla extract
- 2 large eggs beaten (if you can use duck eggs they make everything you bake better and fluffier! Chicken eggs will do as well.)
- 2 overly ripe bananas, peeled and mashed
- 1 1/2 cups fresh or frozen blueberries (If using frozen thaw them first and drain any liquid from them)
Directions:
- Preheat the oven to 350°F / 180°C. Place oven rack in the center of the oven.
- Butter and flour a 9 inch by 5 inch loaf pan and set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the oil, honey, eggs and vanilla until blended. Stir in the bananas and the dry ingredients. Once it is all stirred together add the blueberries. I just fold them in a spatula so they don’t get mushed up from stirring too much.
- Pour the batter into the prepared loaf pan. Bake until a tooth pick inserted in the center of the loaf comes out clean, it takes about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool for about 15 minutes.
